Yummy Chocolate Cake

Because I know that many of you were interested in DH's birthday cake I have decided to post the recipe. I got this recipe from my Mother-in-law, who in turn got it from her cousin. The recipe from my MIL is very hard to follow, consisting mostly of "a little of this, a little of that". I know some people can cook really, really well that way, but I am not one of them. Because this is such an important cake, it is DH's favorite, I had to perfect it. If you love chocolate, this is the cake for you. Very moist and yummy. The recipe looks sneakingly similar to the one found on the back of the Hershey's Cocoa box.

Cake
2 c. sugar
1-3/4 c. all-purpose flour
1-1/2 tsp. baking powder
1-1/2 tsp. baking soda
1 tsp. salt
2 eggs
1 c. milk
1/2 c. vegetable oil
2 tsp. vanilla extract
1 c. boiling water

Heat oven to 350. Grease and flour two 9-in round baking pans. Combine dry ingredients in large bowl. Add eggs, milk, oil and vanilla; beat on med. speed 2 min. Stir in boiling water (batter will be thin). Pour into pans. Bake at 30-35 min. or until wooden pick inserted in center comes out clean. Cool 10 min.; remove from pans. Cool completely. Frost.

Frosting
1 stick (1/2 c.) melted butter
3 c. powdered sugar
1/3 c. milk
1 tsp. vanilla extract

Stir butter and cocoa together. Alternately add powdered sugar and milk, beating on med. speed to spreading consistency. Stir in vanilla.
